Do you ever stand at the fridge wondering what in the world you’re going to eat for lunch? Yeah, me too. As I stared at the lone leftover roast chicken, and a lame green apple I thought – hmm Chicken Salad? Sure, my stomach grumbled. Cue a super quick, and actually rather tasty lunch. I added some carrots for crunch and color, threw in some spinach and voila – lunch. I didn’t plate it, but stood eating over the sink. Classy, I know.
- leftover chicken
- apples (whatever you have – even grapes and berries work!)
- carrots
- mayo
- oil
- vinegar
Shred the chicken, dice up the fruit and carrots and add to a bowl (or be really lazy like me, and use tupperware for easy storage) Add a small teaspoon of mayo, olive oil (or grapeseed, as I did by mistake) and some vinegar (I used red wine). Mix up (and add more dressing if needed) until you have conquered the dryness – I tend to like mine right in between dry and moist – my kiddos think the more dressing the better. My butt, I mean my adult-self, says moderation.
Add pepper to taste and Bon Appetit!
