Raclette Grilled Cheese

If you’re looking for an adventurous and tasty way to liven up lunchtime then have I got a recipe for you. Creamy, cheesy, carby, fruity – delicious. And totally not healthy. At.all. But sometimes when its cold out and you need comfort food – albeit with a twist – you have to pack on the calories. Without further ado – here you go ladies and gents!!

Recipe

3 oz raclette (I love Trader Joe’s sliced Raclette)
2 slices good quality bread – or a cibatta bun in my instance
1 tbsp butter
1 oz apricot or fruit preserves

ps – this is tooooo much jam – it leaked all over my pan – less is more

Butter one side of each piece of bread – this will be the side directly on the pan – add and a very small amount of preserves to each side (more than that will leak out and burn on the pan). Finally, add cheese to each side and place cheese side up in the pan. Cook until bottom is brown and crispy and cheese has become melty and runny. Combine pieces to form a sandwich and voila! Decadent grilled cheese right at home. And if you’re short on bread like I was – just use a bun, roll or other bread-ish item you have lying around. It will be delicious.
