Years ago, I met one of my nearest and dearest friends. She lived across the street and we bonded while kiddos played, we chatted and inevitably stayed long enough that someone was hungry. The first time she made me a tomato and hummus melt I thought she was crazy. And she was – but in such a good way. This thing was divine. Creamy, toasty, melty, salty – it was everything you could want in a sandwich and more. She moved a few years ago so our talks are relegated to the phone, Facetime, and the occasional trip across the country but man – every time I make this, I think of her and smile from all the great memories we’ve made over the past 6 years. So read on ladies and gents for what I call the Rachel Special.

Recipe
- 2 slices of good bread (you can use regular store-bought, but homemade or bakery bought takes this to another level)
- ½ cup of hummus
- 4 slices of tomato – beefsteak, Roma, or another good-sized ‘mater
- 2 slices of cheddar (or whatever good melting cheese you have lying around)
- 2 tbsp capers
Take each slice of bread and spread a generous helping of hummus. Add the tomatoes and capers and top with cheese. Place under the broiler for 5 minutes or until cheese is nice and melted. Serve with a small mixed green salad or side of nuts for extra protein.
