There isn’t usually a lot of chicken piccata left when I make it (that’s for another post!) but when I do have leftovers my little ones devour the chicken salad I make the next day.
However, if you don’t have leftover chicken picatta, but you have leftover chicken you can still make a delicious chicken piccata chicken salad.

Recipe
- 2 cups leftover chicken / chicken picatta – chopped into small pieces
- 2 tbsp capers
- 1/4 cup parmesan cheese
- 3 tbsp mayo or plain greek yogurt + more to taste
- 2 tsp lemon juice
- 2 tsp lemon zest
In a medium-sized bowl, combine all ingredients and mix together. If you are using leftover chicken piccata, only use half of the ingredients to start with – sometimes the sauce is more than enough to create a mixture and you don’t want to make your chicken piccata salad too mouth-puckering.
Once everything is mixed together, add pepper to taste and serve on crusty bread, with a spring mix salad, or even sliced tomatoes.
