Stuffed Pork Tenderloin

Caramelized onions, apples and cheddar cheese unite to create a delicious and homey filling for a lean, and tender cut of pork. This is one of those recipes that looks like it takes a seasoned kitchen chef, but is really super simple and easy. The hardest part is tying the string!

Recipe

  • 1 onion – caramelized
  • 1 apple – diced into small pieces
  • 4 cloves of garlic – roasted
  • 1/4 cup cheddar cheese (or your favorite kind) – shredded
  • 1 – 2 pork tenderloins

Start by carmelizing your onions, and dicing your apple. Mix together with the cheese and roasted garlic until well incorporated.

Next up, butterfly your loins by cutting them down the center so they open up like butterfly wings. Don’t cut too far or you’ll have two separate pieces! You want a nice wide surface. Almost like a pizza dough before all the stuff goes on it.

Spread your mixture across the pork, then roll it up, – like a cinnamon roll. Now comes the fun part – stringing them. It’s best to wrap them with kitchen twine so they don’t come apart. This stringing video gives a way better explanation than I ever could – so check it out and then come on back!

Once your loins are wrapped, sear them to a nice golden brown on all sides. Transfer to a baking dish and cover. Pop those puppies in the oven for 40 minutes or until the internal temp reaches 145. Remove and let sit for 5 minutes. Carve and serve with your favorite side!
