Browned Butter Whipped Ricotta

I’ve had this in my head for a few weeks now, and finally made it last night. And trust me, it’s just as good as it was in my dreams. The richness of the browned butter bits coupled with the smooth texture of the ricotta? Bliss.

Perfect for toast, appetizers, veggies and even pasta. I added it to some ravioli with a pasta water emulsion and the whole family had two helpings. That recipe will be coming next week so stay tuned.

Mix all ingredients together in a blender and blend until smooth and fluffy. Seriously. That’s it. Spread on bread, dip veggies, create pasta sauces, eat with a spoon – the uses are many!
