I posted last week about the whipped ricotta ravioli dish I made with my Browned Butter Whipped Ricotta and I am now delivering on the promise to bring it to you! This is a simple, flavorful and balanced meal that will go well with almost any protein. Steak, chicken, pork, fish, shellfish – its super versatile! I used sausage because that’s what I had on hand, but feel free to skip it if you don’t fancy pork.
This recipe is perfect for a weeknight dinner because it comes together within 30 minutes, but equally special for guests, or celebrating something remarkable. Like my oldest sous-chef making the AB honor roll this semester. But this proud Mama digresses.
Sweet corn, peppery arugula and bright spinach help anchor the dish and create a dinner that’s chock full of veggies, without feeling like you’re eating rabbit food. Nothing wrong with rabbit food, but sometimes you want a hearty dinner that won’t stick to your thighs or arteries.

Recipe
- 2 boxes Sweet Corn Burrata and Basil Ravioli from Trader Joe’s (or your favorite kind)
- 8 oz sweet corn – cut off the cob
- 1 small onion – diced
- 4 garlic cloves – minced
- 1-2 cups pasta water (use more if needed)
- 3 cups of arugula
- 2 cups of spinach (feel free to mix and match with the arugula)
- 1/4 cup parmesan cheese
- 5-6 basil leaves – torn / chopped
- Burrata cheese – optional
- 1 lb sausage – cooked
- 1 cup Browned Butter Whipped Ricotta
Bring a large pot of water to boil. Cook ravioli for 3 minutes.
Sauté the suasage and onions until the pork is crispy and the allium translucent. Add in your garlic and cook until fragrant – about 2 minutes. Add the raviolis and corn to the pan and stir slowly to coat. Toss in the ricotta, basil, lettuces and 1 cup of pasta water. Mix (gently so the raviolis don’t break apart) until sauce is smooth and thickened, about 5 minutes, and greens are wilted. Top with parmesan and burrata cheese. Plate up and dig in!
Tip – before slicing the basil, smack it together between your palms. It will bring out the oils and the flavor!
