Chicken Sausage Nachos

Sometimes you need a quick and easy dinner, with little to no effort. This is that meal. You literally open some cans, some bags, chop stuff up then throw it on top of chips and pop it in the oven. Seriously. It is that easy. Things come together quickly because all the ingredients are probably just waiting to be opened. Not cooked or stirred or manipulated, just opened. The most you need to do is drain a can, and chop some chicken. Even the veggies I used here were already diced!

What’s great about this recipe is you can customize it to whatever you have in your kitchen. No chickpeas? Use black beans. No chicken sausage? Use diced prosciutto or leftover steak, or even crumble up leftover burgers. No sun dried tomatoes? Use fresh. Want onions? Throw ’em on! The choices are only limited to what’s in your fridge or pantry! You could even deep six the chips and throw everything in a quesadilla if that’s your jam.

Recipe

  • 1 lb precooked chicken sausage – diced
  • 1/2 bag tortilla chips
  • 3 slices of American cheese – torn in pieces
  • 1 cup shredded cheese – I used a blend but whatever you like is fine!
  • 1/2 cup sun dried tomatoes
  • 1/2 can refried beans
  • 1 can chickpeas / garbanzo beans
  • 1/2 cup sour cream / greek yogurt / crema

Preheat your oven to 350.

Line a baking sheet with tinfoil and spray with Pam or other non stick goodness. This should make cleanup super easy. Just ball it up and throw it out!

Spread your tortilla chips across the sheet. Add chicken sausage, refried beans (I did warm mine up so they were easier to dollop), pieces of cheese (this helps keep all the chips together), tomatoes, chickpeas and finish with the shredded cheese.

Tip: Scatter everything evenly across the top to ensure you have maximum chip to delicious goodness ratio.

Pop in the oven for 15 minutes or until cheese is melted and golden.

Serve with your choice of sour cream, greek yogurt or crema. Since I was all out of those, I used an everything but the bagel dip and it was the bomb.
