I’d love to say this salad came to me in a whirl of fabulous brainstorming, but alas it originated out of a necessity to use fruit that was going to spoil, and the laziness of not wanting to dirty another dish. Enter a cutting board, ripe peaches and tomatoes, and leftover mozzarella. Not super original, but very delicious, with the addition of really good olive oil and fresh herbs. Fresh, bright and hits just the right notes to accompany a wide range of proteins for a well balanced meal.
After slicing the peaches and tomatoes, I left them on the cutting board, scattered torn pieces of mozzarella and basil then drizzled with olive oil and salt and pepper. It actually looked fairly pretty and presentable, and if you use a nice cutting board, you could absolutely serve it on the table for guest. A spatula works beautifully to scoop everything onto a plate without a mess.

Recipe
- 2-3 tomatoes – sliced
- 2-3 peaches – sliced
- 4-6 slices of fresh mozzarella
- Handful of fresh basil leaves
- Olive oil and salt and pepper
On a cutting board, slice your peaches and tomatoes and mix together. Top with torn pieces of fresh mozzarella (or burrata! yum), basil leaves and drizzle with some good quality extra virgin olive oil. Salt and pepper to taste.
